Kaiseki Cuisine(KAISEKI RYORI)
The main goal of Kaiseki cuisine is to allow a large group of participants to dine and drink, enjoying Sake as well as the courses. Kaiseki cuisine came about when the strict, formal style of Japanese dining was eliminated during the Edo period, after which banquets geared towards drinking Sake were introduced. Developed for entertaining large groups of people, it is still commonly served today at banquets and large receptions.
