After undergoing 82 hours of anaerobic fermentation, it is meticulously sun-dried during the day with controlled shading to ensure optimal drying conditions. Enjoy the refined taste, where the sweet and smooth mouthfeel reminiscent of almonds harmonizes beautifully with the comforting texture reminiscent of chocolate. Don Jaime farm is located in the San Ignacio area of Chalatenango, a region renowned for its high-quality Pacamara. The producer, Jaime Guevara, is a highly respected grower who has won numerous awards and consistently delivers outstanding coffees year after year. He places particular emphasis on the drying stage, using multi-tiered drying beds and shade curtains to ensure a slow, meticulous process. This attention to detail results in exceptionally clean cups with pronounced flavors and no off-notes. This Pacamara Anaerobic Natural lot underwent approximately 100 hours of anaerobic fermentation in plastic tanks, carefully shaded to maintain stable conditions. The cherries were then dried quickly in direct sunlight at the initial stage to reduce moisture, followed by a slow, shaded drying phase on raised beds. The result is a cup with comforting almond-like sweetness, rich chocolate tones, and a refined, black tea-like finish. They are particularly particular about the drying process, and have introduced equipment such as multi-tiered drying racks and blackout curtains to allow them to take the time to carefully finish the coffee. The result is clear coffee with no unpleasant flavors and a distinct flavor. This is a hybrid variety of Red Bourbon and Typica developed in Ecuador. Combining the sweetness of Bourbon and the gorgeous aroma of Typica, it is characterized by its fine acidity and smooth mouthfeel. Due to its excellent flavor characteristics and high cup quality, it is used in barista competitions and has attracted attention for its brilliant achievements. By carefully determining the harvest timing for each variety, Harvesting at ideal ripeness reduces defects and production losses. 5Drip Coffee COLOMBIA EL PARAISO MARAGOGIPE KOJI FERMENTATION (Tasting: Gin, Grapefruit, Sansho, Peach, Complex) This Maragogipe variety comes from the renowned Colombian farm, El Paraiso, which has a history of winning COE (Cup of Excellence) awards. Maragogipe is a rare mutation of the Typica variety and is known for having the largest coffee seeds among all varieties. Typically, larger seeds require more nutrients, and the flavor can sometimes become flat. However, this Maragogipe has been cultivated with ample nutrients, allowing its rich and complex flavors to shine. Moreover, the coffee undergoes a unique fermentation process using Aspergillus oryzae, a type of koji mold. First, the koji mold is cultivated over four days on the dried coffee pulp and outer skin. Then, it is added to the coffee cherries, where an additional four-day fermentation period enhances the coffee's aromatic complexity. This meticulous process highlights the unique characteristics of the Maragogipe variety, resulting in a coffee with a fruity sweetness reminiscent of peach, and a vibrant, spicy aroma similar to sansho.
